Carrot Cake Smoothie...Almost

Since smoothies are a great way to get in some much needed fruits and veggies, I'm trying a lot of new recipes.  Ok, so they aren't "recipes" yet since I'm just making it up as I go along, but at least I'm trying right?
So my goal right now is to figure out how to make a smoothie taste like carrot cake.  I almost got there yesterday.  SO CLOSE!  But not quite.  Alas, I will have to keep trying.  But here is the recipe I came up with so far.  I liked this one.  It was pretty good for not being quite right.  And it has a bunch of healthy goodness in it.  Even some omega-3's!


Almost Carrot Cake Smoothie
6 oz water
3/4 cup cooked carrots
1/4 cup dark sweet cherries (I used frozen)
2 tbsp raisins
1 tbsp walnuts
1/4 cup Greek Yogurt
2 tsp vanilla extract
4 medium-large strawberries (also frozen)
3 pkt. Truvia (Stevia sweetener)
6 ice cubes

Mix all ingredients in blender until fully combined.  Add more water if needed.





I think my biggest problem was adding in the strawberries.  I hoped they would add in some sweetness, but they kind of took over.  Maybe I should just call this one a Strawberry-Carrot Cake Smoothie...
Anyway, enjoy this if you try it.  And I'll let you know when I get the recipe perfected!

  1. You know what's missing that's in carrot cake - coconut shreds and pineapple juice. I bet if you add those in with the raisins, walnuts and carrots, you'll get it. When you figure out the recipe, I want it!
